Chawanmushi (Japanese Steamed Custard Cup)

Ingredients

  • 40 gram chicken
  • 1/2 tsp soy sauce
  • 1 tsp sake
  • 8 shrimp
  • a little salt (for shrimp)
  • 1 tsp sake (for shrimp)
  • 4 dry mushroom
  • a little salt (for mushroom)
  • ginko nuts
  • fish cake
  • 2 eggs
  • 2 cups dashi
  • 3/5 tsp salt
  • 1 tsp soy sauce
Instruction
  1. Marinate chicken with soy sauce and sake and set aside.
  2. Marinate shrimps with salt and sake and set aside.
  3. Mix egg, dashi, salt and soya sauce.
  4. Place chicken, shrimp, dry mushroom, ginko nuts, fish cake in the individual cups.
  5. Pour egg mixuture into the cups , drop "mituba" and steam until egg is firm.
