Shabu Shabu

Shabu shabu is paper thin beef cooked in boiling pot with bunch of vegetables, like nappa and spinach on your dining table and you dip the beef and vegetable into tare (dip). The following is a recipe for shabu shabu dip. I have three different dip recipes here.

Ingredients for sesame dip

  • 6 tbsp white sesame (toasted and ground)
  • 1 clove garlic grated
  • 3 tbsp white miso
  • very little red pepper
  • 1 tbsp lemon juice
  • 1 tbsp mirin
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1/2 cup dashi
Peanuts dip
  • 1/2 cup peanuts (roasted and ground )
  • 1 tbsp miso
  • 2 tbsp sugar
  • 2 tbsp sake
  • 2 tbsp vinegar
  • 1 1/2 tbsp soy sauce
  • 1 tbsp mirin
Ponzu dip
  • 3 tbsp yuzu or lemon juice
  • a little lemon or ponzu zest
  • 4 1/2 tbsp soy sauce
  • 7 tbsp dashi
