Pico de Gallo
(Fresh Tomato Salsa)

Fresh tomatoes not in season? Try our salsa recipe that uses canned tomatoes.

Ingredients

  1/3 cup minced onions or scallions
1/2 cup finely chopped fresh cilantro
4 med. tomatoes, finely chopped
2 tbsp. Tabasco (optional)
2 tbsp. vegetable oil
1 tbsp. vinegar
1 tbsp. fresh lemon juice
1 garlic clove pressed
salt
ground
black pepper

Directions:

  1. Rinse finely chopped onions under running water using a tea strainer, for about 1 minute. Or soak in a bowl for 5 minutes and then strain. Squeeze water out. (Rinsing prevents the onions from overpowering the salsa).
  2. Mix all the ingredients. If your tomatoes are not as sweet as home grown, make sure you add some sugar. The sweetness of home grown tomatoes is one of the keys to success for this recipe. You may need to add up to 1 tbsp sugar depending on your tomatoes.
  3. Serve with tortilla chips.
