Lemon Bars

  1. Preheat oven to 350. Grease 13x9 inch baking pan.
     
  2. Beat at medium speed until soft and creamy about 45 seconds:
    1 cup (2 cubes) butter or margarine
     
  3. Add to the butter and mix until well blended.:
    1/2 cup powdered or granulated sugar
    1/4 tsp salt
     
  4. Add in a few portions and mix until the dough is smooth. Add sliced almonds( optional):
    2 cups all-purpose flour
     
  5. Spread the dough into the prepared pan. Place a piece of plastic wrap over the dough and press on the dough through the plastic wrap with yor fingertips to form a smooth, even layer on the bottom of the pan. Remove the plastic wrap.
     
  6. Bake the crust at 350°F for about 20 minutes until golden brown. Remove the pan from the oven and set the oven at 325°F.
     
  7. For filling combine and whisk until well blended:
    6 large eggs
    3 cups granulated sugar
    1/2 cup all-purpose flour
    pinch of salt
    1 cup freshly squeezed lemon juice
    2 teaspoons finely grated or minced fresh lemon zest
     
  8. Pour filling over cooked crust and put back in oven for 25 -30 min. or until lemon mixture sets.
     
  9. When cool, cut into 24 finger length bars and sprinkle with sifted powdered sugar.
