Tomato Sauce

Ingredients to make 3 cups of tomato sauce:
  • 2 cans diced tomatoes (14.5 oz. or 411 gr each)
  • 3 tablespoons olive oil
  • 1 yellow onion
  • 4 cloves garlic
  • 3 fresh basil leaves
  • 1/2 carrot (optional)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • black pepper
  • 1 seeded red pepper (optional) for a spicier sauce
  1. Chop the onion finely. In a medium saucepan, saute the yellow onion in olive oil and add pressed garlic. Cook until soft and carmelized.
  2. Grate the carrot finely. Add the remaining ingredients to the saucepan. Bring to a boil, then reduce to a simmer and cover with a lid. Simmer for 35 minutes, stirring occasionally to make sure the sauce does not burn.
