Cornbread

This is a sweet and buttery cornbread.

Ingredients for 8X8" pan (For other sizes)

  • 2 cups all purpose flour
  • 1/2 cup yellow corn meal
  • 2 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 cup sugar
  • 1 stick butter or margarine (113 grams)
  • 1 cup milk
  • 2 whole eggs

Directions:

  1. Preheat oven to 400°F.
  2. Grease the pan.
  3. Sift together:
    2 cups all purpose flour
    1/2 cup yellow corn meal
    2 1/2 teaspoon baking powder
    3/4 teaspoon salt
    1/2 cup sugar
     
  4. Beat in a separate bowl 2 eggs. Add:
    1 stick butter, melted or margarine (113 grams)
    1 cup milk
     
  5. Combine all the ingredients with a few rapid strokes.
  6. Place the batter in the greased pan.
  7. Reduce heat to 375°F and bake 20- 25 min.
