Preheat oven to 400°F (204°C).
Sift together into a large bowl:

3 cup all-purpose flour (400 grams)
3 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 cup granulated sugar (100 grams)

Add and mix well with a pastry blender or fingers until the size of small peas:
  1 stick butter, thinly sliced
Add and combine with a least strokes with a spatula:
  1 teaspoon lemon zest
1 cup cream or sour cream
(225 CC)
1 cup dry cranberries ( about 100 grams)

Take the dough on a floured board and shape it to a 8-inch circle:

Cut into 8 wedges and baked on alightly greased and floured cookie sheet at 400°F (204°C)
