Beat in a separate bowl: | |

Add to the eggs: | |
1 cup canned pumpkin
or 1 cup cold cooked mashed sweet potatoes or yams 2 to 4 tablespoons melted butter 3/4 cup milk |

Combine the liquid and the dry ingredients with a few swift strokes. You may add: |

pecans 2 teaspoons grated orange rind |

Fill well-greased muffin pans two-thirds full and bake at 400°F (204°C) for 20 to 25 minutes. Serve warm. | |
