Pumpkin Muffins
Sweet Potato Muffins

Preheat oven to 400°F (204°C)
Sift together:
  1 3/4 cups all-purpose flour
3/4 teaspoon salt
1/2 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
2 teaspoons double-acting baking powder

Beat in a separate bowl:
  2 eggs
Add to the eggs:
  1 cup canned pumpkin or 1 cup cold cooked mashed sweet potatoes or yams
2 to 4 tablespoons melted butter
3/4 cup milk

Combine the liquid and the dry ingredients with a few swift strokes. You may add:

  1 cup chopped pecans
2 teaspoons grated orange rind

Fill well-greased muffin pans two-thirds full and bake at 400°F (204°C) for 20 to 25 minutes. Serve warm.
