Ingredients 
      
        - 1 lb. Italian Tortellini (Trader Joe's Italian Tortellini 
          with pesto filling) 
        
- 1/2 cup chopped red bell pepper 
        
- 1/8 cup. sliced black olives 
        
- 1/2 cup artichoke hearts, drained chopped 
        
- 1/2 cup smoked salmon, sliced 
        
- salt and pepper to taste 
      
      Ingredients for the dressing 
      
        - 1/4 cup olive oil 
        
- 1/4 cup balsamic vinegar 
        
- 1 tbsp. chopped red or yellow onion 
        
- 1/2 tbsp. sugar 
        
- 1 tsp. dijon mustard 
        
- 1 tsp. chopped basil 
        
- 1 tsp. garlic 
        
- 1 tsp. grated parmesan 
      
        - In a large bowl combine all the ingredients of the dressing. 
        
- Cook the dry tortellini following the package instruction. 
        
- Drain the tortellini, while it is still hot, mix with the dressing 
          and the rest of the ingredients.
