Sesame Shoyu Dressing

  • 3 Tbsp. memmi (noodle soup base) [1]
  • 3 Tbsp. rice vinegar [2]
  • 1 Tbsp. mirin (sweet cooking sake)
  • 1 tsp. sesame oil
  • sugar, to taste (optional)


  1. Mix all ingredients in a bowl. Because mirin is fairly sweet it is not necessary to add sugar, but if you want it to be sweeter add sugar to your taste.
  2. This dressing can be stored in the refridgerator for up to a year or longer, depending on the shelf life of the ingredients used.


  • [1] Memmi is produced by Kikkoman and is available at most supermarkets. If memmi is unavailable, substitute with Kikkoman Tempura Dipping sauce or soy sauce.
  • [2] Can be substituted with white vinegar.
