2 oz. (55 g) unsweetened baking chocolate (or any dark chocolate), grated
1 cup (140 g) flour
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
6 oz. (170 g) chocolate chips or butterscotch chips
3/4 cup (70 g) walnuts, chopped
Preheat the oven to 350°F (175°C).
Cream together butter, sugar, and brown sugar.
Mix in egg and vanilla extract.
Grind oatmeal in a food processor until it turns to powder.
Grate chocolate bar.
In a separate bowl, mix flour, oatmeal, salt, baking powder, grated
chocolate and baking soda.
Add dry ingredients, nuts and chocolate chips to egg mixture and mix.
Place golf ball sized dough 2 inches apart on an ungreased cookie
sheet. It will be easy to remove them from the sheet if you use aluminum
foil or parchment paper on the cookie sheet.
Bake at 350°F (175°C) for 10 minutes for soft cookies. Cooking time
may be as long as 13 minutes depending on your oven. Remove cookies
after cooled.
