Red Bell Pepper Paste

This recipe makes about 1/2 cup of red bell pepper paste.

Cut a large red bell pepper into 4 pieces and broil them skin-side up until they are black and blistered. Peel the skin.
 
  • 1-2 large red bell peppers (1/2 lb.)
Sauté onions and garlic.
 
  • 1/4 yellow onion (1/4 lb.)
  • 1 clove of garlic
Puree in a blender or a food processor:
 
  • red bell peppers
  • yellow onion
  • garlic
Season with:
 
  • 1/3 teaspoon salt
  • 1/2 clove of fresh garlic, pressed
  • 1 teaspoon extra virgin olive oil
  • black pepper to taste
