Spinach with Sesame

Ingredients:

  • 2 bundles of fresh spinach
  • a pinch of salt

For the dressing:

  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon caster sugar or granulated sugar
  • 2/3 tablespoon dashi stock
  • 1/2 tablespoon miso paste
  • 1 tablespoon soy sauce

Directions:

  1. Cook spinach in boiling water with a pinch of salt. Drain. Rinse with cold water. Squeeze water out and shape as the photo above.
  2. Toast sesame seeds and grind (or toast and grind in a coffee grinder). Add 1 tbsp. sugar, 2/3 tbsp.dashi, (or water is OK.), 1/2 tbsp. miso paste and 1 tbsp. soy sauce and mix together well.
  3. Pour 1 tbsp. dressing over one serving.
