Cook spinach in boiling water with a pinch of salt. Drain. Rinse with
cold water. Squeeze water out and shape as the photo above.
Toast sesame seeds and grind (or
toast and grind in a coffee grinder). Add 1 tbsp. sugar,
2/3 tbsp.dashi, (or
water is OK.), 1/2 tbsp. miso paste and 1 tbsp. soy
sauce and mix together well.
