1/8 tsp - 1/10 tsp orange zest (The outermost part
of the rind of an orange)
1 cup water
In a 6-qt. saucepan heat the olive oil , stir in the onion and celery
and cook for about 7 min with medium heat until the onion becomes translucent.
Add roughly chopped sweet potato, chicken broth and water. The liquid
shoud cover the sweet potato. Bring to a boil, cover and simmer about
20 min. or until the sweet potato becomes very soft.
Mash the sweet potato in the saucepan.
Add salt, oregano, orange juice, orange rind and black pepper to taste.
Bring to a boil.
Turn off the heat and add evaporated milk. Heat again before serve
but do not boil after the milk is added.
