Char Siu
Chinese Barbecue Pork

The double cook process is what makes
these pork spareribs tender. These are
used in the char siu bao recipe.

Ingredients

  • 1/2 cup sugar
  • 1/2 cup catsup
  • 1/2 cup soy sauce
  • 1 tsp. salt
  • 1 clove garlic, minced
  • 1/4 cup sherry or sake
  • dash of Chinese five spice powder
  • 1~2 tbsp. Hoisin Sauce

Instruction

  1. Boil for at least 30 minutes. Skim the foam:
    1 1/2 to 2 pounds boneless country-style pork spareribs
     
  2. Mix all the ingredients for marinade and marinate the spareribs for a few hours, turning them occasionally so that the meat is marinated evenly:
    1/2 cup sugar
    1/2 cup catsup
    1/2 cup soy sauce
    1 tsp. salt
    1 clove garlic, minced
    1/4 cup sherry or sake
    dash of Chinese five spice powder
    1~2 tbsp. Hoisin Sauce
     
  3. Line the spareribs on a cookie sheet and bake at 350F for 45 ~ 60 minutes. Brush them with marinade every 10 or 15 minutes, or barbecue.
