Apple Crisp

  1. Preheat oven to 375°F (190°C).
  2. Pare, core and slice:
    • 4 cups tart apples
  3. Season with:
    • 2 tablespoons lemon juice
    • grated lemon rind
  4. Place them into a 9-inch pan or dish.
  5. Mix with a pastry blender or with the fingertips:
    • 1/2 cup all-purpose flour
    • 1/2 cup packed brown sugar
    • 1/4 cup melted butter
    • 1/2 teaspoon salt, if butter is unsalted
    • 1 teaspoon cinnamon
  6. Spread these crumbly ingredients over the apples. Bake about 30 minutes at 375°F (190°C). Serve hot with ice cream.
