| Cut cherry tomatoes in half or roma tomatoes in quarters. | |
| Place them on raised screens or racks in single layers. Put each pierce apart. Sprinkle salt lightly. | |

| Your oven temperature should be between 140° and 150° F(65°C). Do not exceed 200°F(93°C). You want to dry but not to cook them. Drying will take from 10 to 24 hours, depending on the size of a piece and how dry you want. I prefer them still soft. | |

| This is optional, but I like to peel them. It is very easy to peel after dried. | |

| Put in a jar and add extra virgin olive oil to cover. | |
